4 large daikon
3/4 c salt
Chile flakes Optional
Cut up 4 large daikon, put in a large jar with 10 cups of water and 3/4 cup of salt. Soak for 24 hours (room temperature okay). Drain and divide into smaller jars.
Dissolve 1 cup vinegar, 2 cups water, and 3 cups of sugar (chile flakes optional). Pour into jars.
Can substitute daikon with turnip.
